Amounts In the original recipe Mr. Morgenthaler calls for cup measures. We keep proportions the same, using ounces instead of cups, yielding a solid 2-3 person serving. If you want a gallon batch, change the measures from ounces to cups and adjust the sweetener.
Sweetener We prefer light agave nectar to simple syrup for some recipes, and especially for margaritas. Agave nectar is significantly sweeter by volume than simple syrup so you need to reduce the amount. Extensive experimentation revealed the need for a new measure, the "squeeze". Our agave nectar (by Madhava) comes in convenient squeeze bottles, and a single firm squeeze of the bottle yields just enough sweetness for one drink.
If you are making a gallon batch, revert to simple syrup for simplicity/volume/cost, using two (2) cups of simple syrup in place of agave nectar and water.
