Ingredient: ginger syrup

Create ginger syrup by adding 1-1/2 cups sugar (or one cup agave nectar) to 1 cup water in a saucepan on high heat. While the sugar syrup heats up, puree one to one and one half pounds of fresh ginger in a juicer, food processor or blender. If not using a juicer, press the ginger through a medium wire strainer to extract as much juice as possible into a measuring cup. After the sugar dissolves, remove the saucepan from the heat and add the ginger liquid. Let cool. Keep refrigerated for later use.
